Crockpot Buffalo Chicken Pasta

Makes 6 servings (Increase/Decrease).
Preparation time is 15 min
  • 1 pound · Chicken breasts, bite-sized pieces
  • 1 can · Cream of chicken soup
  • ½ cup · Hot sauce, like for buffalo wings
  • 1 ½ cup · Shredded mozzarella cheese
  • ½ cup · Crumbled blue cheese
  • 3 cup · Uncooked penne pasta
  • 1 ½ cup · Sour cream

  • DIRECTIONS
  • 1 
    Season chicken with salt and pepper and put in crockpot.
  • 2 
    Add soup and hot sauce. Stir.
  • 3 
    Cook on low 4-6 hours or high 2-3 hours.

  • 4 
    Stir in cheeses and sour cream. Turn off crockpot.
  • 5 
    Cook pasta according to package directions. Drain. Add to crockpot.
  • 6 
    Stir well and serve!











This recipe was simple enough.  When I tested this, I had night class, so I had the chicken, soup, and hot sauce in the pot cooking for the husband.  I mixed the cheeses and sour cream in a bowl and put it in the fridge so that he'd just have to dump the bowl in the crockpot once the chicken was done cooking.  With the chicken in smaller chunks, I reduced the cooking time to low for 3.5 hours, which he said was good.  



He sent me a text in class after he added the pasta and had dinner with the kids.  He even took pictures of the finished dish for me! :)



Verdict: Another hit! The kids actually really loved the flavors of the sauce!  The mister mentioned that it could probably work as a dip as well if shredded chicken was used, maybe throw in some beans of course no noodles.  He wants to experiment with that now that it's football season. :)  I think this one is going into the recipe book now!

Spicy Romano Chicken Pasta with Artichoke Hearts and Sun Dried Tomatoes


A description on pins like these is what inspired me to create this blog!  While searching for pins to test after my last final of summer semester on Wednesday (I hope I end up with an A!), I stumbled upon this one!  I pinned it not just for the picture, but for the description of how it's "the best recipes on pinterest!!"  I swear, people need to check grammar more often when using the internet.  :)

Boss Sanders is the blog where you'll find this pasta recipe.  This is a family blog (with the wife as the main contributor) and you can find more recipes, tips like how to save money, and right now you can follow them on their journey through adoption! Definitely check out their blog!

Ingredients

The Sauce:

  • 1 pint heavy cream
  • 4 T butter
  • 2 tsp  salt
  • 1 – 2 tsp pepper
  • 1/4 cup romano cheese
  • 1/4 cup parmesan cheese
  • 2 tsp cayenne pepper  *EDITED*  My husband and I like a lot of KICK to ours.  IF you or your family doesn’t, please read comments first.  If you aren’t sure how much cayenne you will like, add a tiny amt and taste as you add until it’s to your liking!
The Rest:

  • 10 ounce package of bowtie pasta cooked and drained according to package directions – al dente.
  • 1 1/2 T melted butter
  • 1/2 cup sliced mushrooms
  • 1 small jar artichoke hearts, drained
  • 1 7-8 ounce precooked sliced grilled chicken (we also add equal amounts of sausage to ours…although shrimp, beef, and crab would be great too!)
  • 1/8 cup sundried tomatoes, chopped
  • 1 oz heavy cream

How To Make It:

Sauce:

  • Melt butter in saute pan or skillet. Add cream, salt and pepper, heat to a boil. Remove from heat and fold in cheeses and cayenne pepper. Set aside.
The Rest:

  • In a large skillet over medium heat, melt butter, then add mushrooms, and sundried tomatoes. Stir for one minute. Next add artichokes and chicken (and cooked sausage or other meat). Stir. Stir in 1 ounce heavy cream and 1/2 of the sauce. Add bowtie pasta followed by rest of the sauce. Stir gently. Serve.
I HIGHLY SUGGEST YOU DOUBLE OR TRIPLE THE RECIPE.  IT’S AMAZING!


I love that you can alter this recipe to your preference.  We went with chicken only since we had a lot of it.  Next time we will definitely add some sausage or something else in addition to the chicken.  I went with the suggested amount of cayenne pepper for this trial.  Before I added the artichoke hearts, I made sure to drain it from the marinade it came in.

Instead of a 10oz box of bowtie, I had on hand a 16oz box (I can never pass up 5 for 5 deals at the grocery store!).  I cooked the entire box and there was probably only about 1/2-3/4 cup worth of cooked pasta that I didn't add to the mixture.  If you have a huge family, sure, double or triple the recipe, but man it already yields a lot on its own!  We like sun-dried tomatoes, so next time around we'll add more than 1/8 cup.

The verdict: This is our new favorite pasta dish that we've tried from pinterest!  It used to be the penne pasta with sun-dried tomato cream sauce, but this hands down has taken the title in our family!  The posted amount of cayenne pepper adds the right amount of kick and isn't too spicy for those who can't handle the heat.  If it is, simply cut it down to 1tsp.  :)  Hope this recipe is a success in your household as well!

Sour Cream Bacon Crock Pot Chicken

Chicken and bacon?  I've never had the two together before so when I came across this pin as I was going through my food board for a pin to test, I decided why the heck not?  5 ingredients and a crock pot, what's not to like about this recipe?


The recipe comes from Moms with Crockpots, a busy mom of 3 who created the blog because she was using her crock pot a lot more to help eliminate having to figure out what the heck to make for dinner each night!  I definitely know her pain, and glad that I found her blog from Pinterest!  Here is the recipe and instructions from her site:
 
Sour Cream and Bacon Crockpot Chicken
Recipe type: Dinner
Prep time: 15 min

Cook time: 8 hours
Total time: 8hr 15 min

Serves: 8

Ingredients:
8 bacon slices
8 boneless, skinless chicken breasts
2 (10 oz) cans roasted garlic cream of mushroom soup
1 cup sour cream
1/2 cup flour (all purpose or gluten free blend)
salt and pepper to taste 





Instructions


Place the bacon in a large skillet and cook over medium-low heat until some of the fat is rendered. Be sure that the bacon is still pliable and not crisp. Drain on paper towels. If you use this method, reduce the flour to ¼ cup. Or don’t cook the bacon and proceed with the recipe.
Then wrap one slice of bacon around each boneless chicken breast and place in a 4-5 quart crockpot.
In medium bowl, combine condensed soups, sour cream, and flour and mix with wire whisk to blend. Pour over chicken.
Cover crockpot and cook on low for 6-8 hours until chicken and bacon are thoroughly cooked. You may want to remove the chicken and beat the sauce with a wire whisk so it is very well blended.
Pour sauce over chicken.
If you have a newer crockpot, check the chicken at 5 hours. The internal temp should be 160 -170 degrees F.


I bought a family pack of boneless, skinless chicken breasts that were decent sized and ended up cutting all of them in half.  With this new size, they were more suited for a single serving since one chicken breast can really feed 2 people (in my opinion).  Of course, this meant more bacon, so instead of 8 pieces of bacon and 8 chicken breasts, I had 14.  :)  

I have never had bacon that wasn't pan fried or baked, so when I read her option of not cooking the bacon before putting it in the crock pot, I decided to try that route.  After cutting each breast in half, I wrapped each one with one slice of bacon and placed them in the crock pot.

A note to remember about the roasted garlic cream of mushroom soup: it's darker than regular cream of mushroom soup.  When you mix in the sour cream and flour, this of course makes the mixture lighter.  I recommend using a spatula to help spread over the top of the chicken.


If you have a "newer" crock pot (not quite sure what she meant, made after 2010 maybe?), the cook time is definitely not going to be over 5.5 hours!  If you recall the Beer Chicken test, the chicken was a bit dried out after cooking for 6.5 hours.  I know that the original recipe for this one says 6-8 on low, but after the  Beer Chicken results, I decided to set it for only 4.5 hours!  That was when I would cut a piece of chicken to make sure it cooked all the way through, and if it did, I would taste test then (praying that I don't get sick).

After 4.5 hours, I opened up the crock pot.  You could see why she suggests getting a whisk to mix the sauce together more after it's done cooking.


I took out a piece of bacon wrapped chicken and....




It was fully cooked!!  On top of that, it was tender and not dried out!  Yay!  So now I know for my crock pot, chicken is done in 4.5 hours and anything more just dries it out.  :)  I'll admit, what threw me off was the pink bacon, but that was cooked as well.  Just need to get over the fact that it isn't crispy.  If you can't, then just slip the bacon off the chicken and enjoy.  With the soup and the bacon, you don't need to add anymore salt to taste.  We didn't add any pepper either because we found it to be balanced enough without it.

Verdict:  Another chicken dish hit.  Paired with a salad or noodles and you're set.  We'll had to retest the Beer Chicken with the new cook time to see if it comes out better. :)

Crispy Cheddar Chicken

I know you've pinned this one or you've at least seen it.  A picture of nicely breaded chicken with a white cream sauce oozing on top.  A dish that looks so delicious in a picture, it just has to be good so of course, you pinned it.


That's right, this post is about testing the Crispy Cheddar Chicken recipe... that I've already made my family three times since I've pinned it.  Does that tell you something other than I'm a slacker for taking so long to post about it? ;)

Jamie, from Jamie Cooks It Up! Family Friendly Recipes is the originator of this chicken pin (which she adapted from another blog).  Take a look around her site as well, she has some amazing recipes you should test out as well! If you haven't already taken a peek at the site for the low-down on crispy cheddar chicken, here it is:

Crispy Cheddar Chicken
Time: 15 minute prep + 35 minutes baking

Yield: 7 servings

Recipe from adapted from What’s Cookin’ Chicago via Pinterest

Chicken:

4 large chicken breasts

2 sleeves Ritz crackers

1/4 t salt

1/8 t pepper

1/2 C milk

3 C cheddar cheese, grated

1 t dried parsley

Sauce:

1   10 ounce can cream of chicken soup

2 T sour cream

2 T butter

1. Cut each chicken breast into 3 large chunks.
2. In a small food processor grind up the ritz crackers.
3. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the 1/4 t salt and 1/8 t pepper into the cracker crumbs and stir the mixture around to combine.

4. Dip each piece of chicken into the milk…then the cheese. Press the cheese into the chicken with your fingers. Some of it will fall off when you add it to the cracker crumbs, don’t worry about it. 
Press the cheesy chicken into the cracker crumbs and press it in. By the time you are coating the last piece of chicken, the dish you are using for the crumbs will be full of cheese. Don’t let it get you down. Once the cheese melts in the oven it will adhere nicely to the crumbs and the crackers. 
5. Spray a 9×13 pan with cooking spray and lay the chicken inside the pan
6. Sprinkle the dried parsley over the chicken. 

7. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10 minutes, or until the edges of the chicken are golden brown and crispy. 

8. Into a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken.

Now, she makes it look easy and effortless in her pictures.  I struggled just a tad bit in a certain area...




When it came to coating the chicken breasts!  The cheese was really stubborn and didn't really want to stick.  I know she writes to not worry about the cheese and Ritz Crackers to stick, but I was determined!  The method I came up with was to really press the cheese into the chicken on one side along with the crackers, lay that breaded side in the baking dish down and then sprinkle cheese and crackers on the side laying up.  It did kind of cut time out because I was only really doing one side of the chicken.  After doing a couple like that, I pretty much waited until I had all of the chicken laid out in the baking dish and then did all of the "naked" sides at the end!  The sauce was extremely easy to make!

Verdict?  The Crispy Cheddar Chicken was a HIT!  There was only one teeny, tiny remark from the husband, which was the salt factor.  It wasn't overwhelmingly salty, but it didn't need the extra salt in the crackers (we've since omitted that step and it was that much better!).  Hopefully this chicken dish becomes a favorite in your household as well!

Beer Makes Everything Better, Right?

Beer and chicken.  Two things that I think go together well, don't you think?  Well, beer could go with a lot of meals, who am I kidding? ;)

Crock Pot Beer Chicken.  Now, We've cooked brats with beer, turkey chili, I think I've baked with beer before, but never thought to try chicken.  The pin I saved on Pinterest doesn't link to any particular site except a site called "Foodpicsgo.com" which just brings you to a page with the same recipe listed in the description and the chicken picture.  Here's what I pinned:






6 ingredients are all you need: 2lbs of boneless, skinless chicken breasts, a can of your favorite beer, 1 tsp salt, 1 tbsp dried oregano, and 1/2 tsp black pepper.

We decided to use Fat Tire since we're both fans.  I combined all of the spiced together in a small bowl first.  Then I placed the chicken breasts in the crock pot, sprinkled the spice mix over the chicken, and poured the beer over and around the chicken.  The crock pot was set on low for 6.5 hours.

The aroma the chicken made as it neared the end of the cooking time was so tempting!  My husband decided to pair it with rice since there was a lot of sauce that could be poured over the rice.  It was delicious!  I wouldn't go over 6 hours (maybe try 5 hrs?) as it did dry out some parts of the chicken-they were small parts though!  The chicken breasts were definitely tender enough to shred with just a fork! *update-we discovered that 4.5 is perfect for chicken in our crock pot! At that mark, check your chicken :)

Another successful recipe thanks to Pinterest!  We'll definitely be adding this one to the book and trying different beers each time we make it!

Cream Cheese Chicken Enchiladas

Enchiladas.  I personally have never attempted to cook any Mexican dishes in my life and this pin was a bit intimidating when I saw it just for that fact alone.  A few years ago I was on a fajita kick and would use those marinade packets where you'd mix it with oil and put it with your meat of choice in a plastic bag, grill up the meat and then have different ingredients to build your own fajita-- I hardly call that an attempt at a Mexican dish.

I've been seeing this particular chicken enchilada pin and like all pins that interest us, decided to pin it for later.  Of course when I went through my food board, I noticed that I had pinned it awhile ago (don't you hate when that happens?).  I decided to make it for dinner tonight, and what a great opportunity than to document the attempt for this brand new blog, right?  Unfortunately it isn't the first Pinterest recipe I've tried out for this new year (I'll definitely be making that recipe again and blogging about it since it was a hit) as I didn't think about creating this blog until today.

I think there are a couple different recipes linked to "Cream Cheese Chicken Enchiladas", but this is on the one that we're using tonight, courtesy of CouponCousins.net.  We made a couple substitutions, which you can read about after the original recipe.

Here's the recipe straight from their website:

TO-DIE-FOR CREAM CHEESE CHICKEN ENCHILADAS
2-3 chicken breasts, shredded {OR rotisserie chicken}
1 {8 oz.} pkg. cream cheese
1 28 oz. can green enchilada sauce {I used Las Palmas}
1 can black beans, drained & rinsed
2 cups cooked rice {I used boil in a bag because I can’t cook rice to save my life!!!}
Tortillas {I used Mission flour tortillas, but homemade would be muy delicioso!}
1-2 cups shredded monterrey & colby cheese
Cook chicken and shred; boil rice. Mix the shredded chicken, cream cheese, and 2 cups of the enchilada sauce together. This mix makes A TON!!!!
Pour half a cup of the enchilada sauce into the bottom of a 9×13 baking dish.
Layer the rice & black beans to your taste and top with the chicken mixture in each tortilla.
Roll up each of the tortillas and place them in the baking dish seam side down.
Top with 1 cup of the enchilada sauce and 1-2 cups of shredded cheese.
Cover the baking dish with foil and bake at 375 for about 25 minutes.
Uncover the enchiladas, turn on the broiler, and broil for about 3-5 minutes uncovered…just long enough to brown the cheese.

As we shopped for the ingredients, I decided to go for refried beans instead of black beans because I like them better over black beans.  My husband tells me it's more authentic to use them as well, so you could say we opted refried for that reason too. ;)  We also went with Spanish rice since the recipe doesn't say what specific type to use. Make sure that you're using tortillas that are at least 9" in diameter (if the measurement is listed on the package).

I started out with using frozen chicken thighs because we have a bag of it sitting in our freezer.  I had to boil 4 pieces to have enough chicken for the mixture.  If you use chicken breasts, about 3 pieces would be enough.  While you're cooking the chicken (if you didn't go the ready-made rotisserie route), make sure to pull the cream cheese out of the fridge so it can soften up to make it easier to mix. 

After the chicken is done, make sure to let it cool down a bit so you don't hurt yourself shredding it ;) (yep, I did that).  I mixed the block of cream cheese, 2 cups of enchilada sauce and the shredded chicken in a small mixing bowl.  This is what it looked like after mixing together:


I turned on the oven to 375° before I started the rice to give it a chance to warm up.  I cooked the Spanish rice as the listed on the package (omitted the oil), and after it was done, I added the can of refried beans and mixed them together; if you prefer to keep them separated, you can (refried or black beans).  Next was pouring 1/2 cup of enchilada sauce at the bottom of the 9x13 dish.  If you tilt the dish around, you'll easily coat the bottom of the dish (and you don't have to dirty another utensil!).  Then I spread the rice and refried beans mixture on top.  If you chose to keep them separated, it doesn't matter what order you layer them!


Remember when I mentioned earlier that I've never attempted Mexican food before?  Yea, I'm glad I consulted my husband for the next few steps!  Make sure to put a good amount of the mixture down the middle of the tortilla.  I'd say about 5 scoops of the mixture is enough.  When you roll it up, my husband told me not to be afraid to roll it up tight (but not TOO tight; imagine rolling up your soft taco so the toppings don't fall out) because it will expand a little when it's in the oven.  We were able to fill up 7 tortillas with the mixture and fit them in the 9x13 dish nicely. Don't forget to place them seam side down in the dish!


 


The recipe says to pour 1 cup of enchilada sauce on top of the enchiladas--just pour the remainder of the can on top.  The rest of the contents is the perfect amount!  As for the cheese, we didn't bother to measure it out.  I eyeballed it and I probably used about 1 1/2 cups of cheese on top, making sure I covered the top.




Bake as directed, covered in foil at 375° for about 25 minutes. Once the timer goes off, take off the foil and turn on the broiler for another 5 minutes. If you have a good amount of cheese on top like we did, don't wait for it to brown! You'll run the risk of burning the bottom-the rice and beans!


 Voila!  Finished Cream Cheese Chicken Enchiladas!



What you see plated is one enchilada and then any rice and beans that were left from that "section" of the dish.


The verdict?  DELICIOUS!  Very tasty and flavorful, a hit for our family!  Definitely keeping this pin and adding the recipe (along with the changes we made) to our family recipe book!  Hope y'all have success with cream cheese enchiladas as well!
